This recipe features in my book, Notes from the Witches Kitchen and is one I got from a street seller in Delhi, who took me to his home and introduced me to the women who pre prepared this wonderful street food snack.
1. Boil 500g potatoes with salt and mash.
2. When cool enough to handle, shape into little cakes and poke a hole in the top with your finger.
3. Put a tiny spoonful of left over dhal into the depression and enclose the potato around it. Roll in flour or breadcrumbs.
4. Fry in ghee until brown on each side and serve with tamarind chutney. (Idli)
