We most recently discovered the delightful cuisine of Dominica – a gem of a nation situated in the turquoise waters of the Caribbean.
Dishes in Dominica are inspired by a potpourri of cultures: Creole, African, European, and more! This results in a tasty blend of deliciousness. Oh, yes. It’s that good.
For this week’s recipe, we’re going simple and tasty, with an avocado based recipe as requested by one of our lovely readers, Marina. Check out this recipe for Avocado Salad; this takes just a couple minutes to prepare, and uses just a handful of ingredients. Enjoy!
Avocado Salad
Serves 2
Ingredients:
Juice of one lime (roughly 1 tablespoon)
1 hot pepper (such as scotch bonnet), seeded and minced
2 tablespoons olive oil
2 pinches of salt, sugar, and black pepper
1 ripe avocado, peeled, cut in half, pit removed
1 small papaya, peeled, cut in half, seeds scooped out
Instructions:
In a small bowl, mix the lime juice, minced pepper, oil, salt, sugar, and black pepper. Set aside. Cut avocado halves lengthwise into 8-10 slices, and then cut the papaya into slices the same size. Arrange the fruit on two plates, alternating and overlapping the avocado and papaya. Stir the dressing and scoop over the arranged fruit. Serve immediately.
