It’s time again for your Recipe of the Week! This week, I’ve got a recipe from Aruba for you to try out.
Soenchi are cute little meringue cookies, traditionally tinted lightly with red or green food colouring (the ones in the photo aren’t tinted, but tiny red and green meringues would be perfect for a holiday treat, no?). They’re simple to make, and even easier to eat (yum!), so whip up a batch of these miniature lovelies and embrace your inner islander.

Aruban Soenchi
Adapted from Recipe Island
Makes 12
Ingredients:
1 large egg white, at room temperature
1 tablespoon granulated sugar
1 drop red or green food colouring (or, divide the batter in half and do a batch of each!)
Directions:
Preheat oven to 250°F. In a medium bowl, using an electric mixer beat the egg white until stiff. Gradually add the sugar, continuing to beat until glossy peaks form. Fold in food colouring. Drop meringue by the teaspoonful onto a parchment-lined cookie sheet. Cook in preheated oven for one hour, turn off oven and open door, and let Soenchi cool. Serve once they cool to room temperature (about 20-30 minutes).
