Oh, Guadeloupe! This gorgeous nation boasts a bevy of delicious food; and as a French overseas department, it’s got a certain je ne sais quoi. The food in Guadeloupe is primarily Creole, however, and that mixed with the other cultural influences, creates a pretty tasty cuisine.
This week we’re going French and making Ratatouille. This French classic is also a Guadeloupean one, and now you can make it at home!
Creole Ratatouille
Serves 4
Ingredients:
4 tablespoons oil
2 cloves garlic, smashed and minced
1 large onion, halved lengthwise and cut into 1 cm thick slices
2 zucchinis, diced
1 cup chopped okra
1 leek, thinly sliced, greens discarded
1 eggplant, peeled and cut into 2 cm thick slices
3 tomatoes, diced
2 bell peppers, diced
1 bouquet garni
¼ teaspoon thyme
Salt and pepper, to taste
Grated cheese (white cheese preferably, parmesan works well), optional
Instructions:
In a large, deep pan with a cover, heat oil over medium-high and then add the garlic and onion and cook until fragrant and the onion is tender. Add the zucchinis through thyme and continue cooking, stirring often, for about 10 minutes. Reduce heat, cover, and let the vegetables simmer for 45 minutes. Remove from heat and let sit for 10 minutes before serving. Season with salt and pepper to taste, and sprinkle with shredded cheese.
