It’s Wanderfood Wednesday and it’s time to savor Empanadas from Cozumel, Mexico. As part of a food tour with the Cozumel Chef, I enjoyed shrimp and edam cheese empanadas as well as others made with slow roasted pulled pork and spices. They were delicious.

I love empanadas. Through my travels, I’ve realized that almost every culture has their version of a “meat pie” and I love them all. Cornish pasties, meat pies, empanadas, samosas, calzones, beouf en croute – I eat them all, whenever and wherever I can find them.
