Vietnam is famous for its pho (pronounced with a slight lilt at the end). You’d think that I ate this every day while there.
Nope.
Unfortunately for me, most roadside stands, cafes and restaurants serve pho with a chicken or beef stock. Even their “veggie” option only means the veggies are steeped in meat stock.
BUT, I did find this full-on veggie version at Pho 2000. This is a small chain of noodle shops and the one we visited near the Ben Thanh market is famous for having served President Clinton a bowl of steaming goodness – likely not vegetarian.
