I’ve been toying with a vegan diet for awhile now. I’m not confident I can go whole hog (so to speak) but I definitely love incorporating entire days of veganism into my diet and I just finished up an entire week of animal-free food (yippee)!
One of the toughest parts of being vegan is that it makes it super hard to go out to eat. Many restaurants don’t cater at all to a vegetarian diet, let alone a vegan diet. Fortunately, Seattle is home to a few really excellent vegan-friendly restaurants.
This weekend, Jon and I ate dinner at Chaco Canyon in the U-district. I had my favorite comfort food – the Reuben sandwich (above) – which is filled with Field Roast, mustard, vegan cheddar, marinated onions, tomatoes and sprouts all grilled on rye bread. That and a side salad made for more than a meal for me.
