Each month, the folks at Endolyne Joe’s in Seattle change around their theme and menu and feature the food of a particular country or region. This month is Cuban food!
For brunch this weekend, I had the yam pancakes with toasted coconut butter and pineapple syrup. I ordered this because it reminded me of Hawaii and was not disappointed with the fresh summery flavors and added bonus of yam chunks in the pancakes.
Jon went the more traditional route and ordered pancakes off of their regular menu. These are the sour cream cloud cakes with blueberry syrup and whipped butter.
I don’t think either of us went wrong with our choices!
