After describing my famous chocolate chip chipotle cookies to Pam at Nerds Eye View a few weeks ago, she immediately told me about the amazing chili pancakes on the menu at Endolyne Joe’s in West Seattle.
The Chimayo chili pancakes are part of Endolyne’s rotating menu – in this case featuring Southwest cuisine. I didn’t want to risk missing the chance to taste these so Jon and I zipped over there to check them out for ourselves within days of hearing about them.
The verdict was that they weren’t as hot as I anticipated (I’ve become accustomed to hot food as I’ve been processing hot sauces annually with friends for the last 7 years) but they definitely had a sufficient enough kick for most people’s tastes. These are made of yellow cornmeal, whole wheat and Chimayo chiles and are accompanied by agave maple syrup! While I loved the hot chilis, the best part about them was the use of cornmeal which gave them a texture you don’t usually find in a pancake.
As far as I can tell, these are still being featured and will be until October 14, when the menu changes to Italian food.
