Hello all! I hope you are having an awesome week wherever you are. Here in Chicago, we have been enjoying our first 70 degree and sunny couple of days. As I type this, I am sitting outside taking in the sights and smells of spring.
A couple weeks ago, I went to Kansas City to attend Go Blog Social, a two day conference for bloggers, photographers, and entrepreneurs. Just being surrounded by the most creative, talented women was incredibly inspiring and I can’t wait to go back next year!
While I was in the area, I had some time to explore and was amazed by the art and food scene. As I wandered about, I kept stumbling upon such unique and creative places that I left disappointed that I didn’t have more time. And this is how I discovered Cafe Gratitude.
Cafe Gratitude is a mostly vegan and 100% organic farm-to-table restaurant. They are dedicated to selecting local, organic ingredients to support the community and the environment. Their motto is one that really strikes a chord with me. They believe in appreciating the little things in life and nourishing yourself from the inside out. I truly believe that food is medicine and can affect the way we feel. By providing ourselves with food that is healthy and only makes us feel our very best, we are able to extend that gratitude to all aspects of life. Throughout the restaurant, there are sayings and little reminders of what matters. The staff will ask a question of the day, such as “who can you acknowledge?” or “what are you grateful for?” In doing this, they hope to spark conversation and get their customers to think about how they can extend their gratitude. As their mission statement says, “We invite you to step inside and enjoy being someone who chooses: loving your life, adoring yourself, accepting the world, being generous and grateful every day, and experiencing being provided for. Have fun and enjoy being nourished.”
Honestly, the menu was a little overwhelming because there were so many options. The whole back side of the menu was just drinks! They had everything from hot tonics and elixirs to breakfast smoothies to cold-pressed juices. I ended up going with a raw veggie wrap and a rosewater lemonade. The best part about the wrap was the spinach and sunflower seed flatbread. Seriously, it was heavenly. I loved it so much, I brought the lovely Mari Chuy back the next day for cacao banana smoothies! Other items on their menu included: an eggplant parmesan sandwich, a CLT (coconut, lettuce, tomato), raw lasagna, butternut squash tacos, pad thai kelp noodles, and tostadas.
