A couple of weeks ago, (almost) all of my family was in town, which doesn’t happen very often. We were fortunate enough to have a 70 degree weekend, which meant the kids were able to run about and dirty up their Sunday best. It was great! My mom prepared one of the best meals I have had in a long, long time…with help from my aunts and niece of course! There were casseroles, fruit, salads, ham for the meat eaters, pasta, and lots and lots of desserts. There was so much to choose from that I almost felt like it was Thanksgiving. Although it was just a relaxing day and a lot to be thankful for, so Thanksgiving in spring I guess! My lovely sister made this beautiful mango salsa recipe and it was too good not to share. It is very sweet with a hint of spice added in. Serve it with tortilla chips, crackers, or as a topping on bread. Make it for a summer picnic, a potluck, or your next family gathering and it’s sure to be a hit. Enjoy!
Ingredients
- 2 mangos, diced (if you don’t know how to dice a mango, see below)
- 1/4 cup chopped red onion
- 1/2 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- juice of one whole lime
- Kosher salt
Directions:
Add ingredients to large mixing bowl. Stir in the lime juice and add salt and pepper to taste. Let sit for a half hour before serving for flavors to meld together.
Tip: You can also add other fruit that you think would be tasty. I think this would be amazing with pineapple for a sweeter flavor.
To dice a mango:
Mangos have long, flat pits in their core. You need to cut around the pit of the mango (almost like you would cut an apple). Hold the mango on a cutting board so that the flat sides are facing away from you. Using a sharp knife, cut on either side of the core so that you have two halves. Once you do, take a smaller knife and dice the mango into cubes (see picture below). At this point, they will not break away from the skin. Bend the mango half backwards so that the cubes pull away from the skin. Use a spoon to scoop the fruit and you will have your mango cubes! Repeat with the other half.
