I’ve been seeing a lot of recipes this season with Tomatoes and Peaches put together. I was so intrigued I HAD to give it a try! The combination is so surprising and interesting, especially when you throw in the vinegar, basil and feta.
Both in season at the same time, it should be a natural fit to put these two flavorful fruits together, but I’ve never seen it before, and honestly the sound of them together was a little outlandish to me at first. But I figured there must be something to it, so bravely forged ahead.
I started with 3 Medium Sized Heirloom Tomatoes, and 3 Medium Sized Peaches cubed and evenly distributed on a platter. I then sprinkled a layer of Fresh Basil and non pre-crumbled Feta Cheese, followed by a generous sprinkle of good Olive Oil. Because we didn’t have balsamic, I used a nice dose of Wine Vinegar, which actually worked out really well, especially with the peaches.
With a few minutes before serving time I added some kosher salt and fresh ground pepper and we were good to go! All told it probably took 10 minutes to prepare. Quick, easy and absolutely delicious, it’s the perfect summer salad.
TIPS
- Make sure the tomatoes are fresh, ideally from your garden or local farmers market. It will make all the difference in flavor!
- Don’t go too heavy on the Feta. One generous layer was plenty and the cheese really helped connect all the flavors together.
- The peaches were divine with the wine vinegar, and would actually be amazing as their own salad. The peach seemed to absorb the vinegar creating a truly fantastic sweet acidity with every bite.
