I asked for my Facebook friends’ favorite holiday cookies the other day, and snickerdoodles were a top contender for most-loved cookie. Chewy, sweet, and cinnamony, there isn’t too much you can do to make them better – or is there?
Trade in cinnamon and sugar for a Masala of sugar, ginger, cardamom, cinnamon and cloves, maybe even a little anise depending on which recipe you follow, then toss in a bag full of Ghirardeli white chocolate chips, and you’ve got some fantastic fusion happening. This recipe is adapted from Post Punk Kitchen’s Chai Spice Snickerdoodles and makes 2 dozen cookies.
Chai Masala Topping
¼ Cup Sugar
½ tsp ground ginger
¾ tsp ground cardamom
½ tsp cinnamon
Pinch ground cloves
Pinch star anise (optional)
¼ tsp nutmeg (optional)
Cookies:
½ cup canola oil
1 cup sugar
1/4th cup pure maple syrup
3 Tb milk (though I’m tempted to try eggnog…)
2 tsp vanilla extract
2 cups flour
1 tsp baking soda
1/4th tsp salt
½ tsp ground cinnamon
6 oz white chocolate chips
1. Preheat oven to 350. Line 2 large baking sheets with parchment paper.
2. Mix the masala and spread out on a plate.
3. In a mixing bowl, mix together oil, sugar, syrup, milk and vanilla.
4. Mix in remaining ingredients until you’ve got a pliable dough. If it’s too sticky, add in a little more flour.
5. Roll dough into walnut-sized balls and pat them into the Chai Masala, flattening them into pudgy disks.
6. Place on baking sheet sugar side up, at least 2 inches apart, and bake for 10-12 minutes.
Now, while you’re savoring your White Chocolate Chip Chai Snickerdoodles, try to say it three times fast. 😉
