Quick post this morning since I’m flying off to Austin, Texas, in a few hours. I’ve been meaning to visit my cousins in Austin for ages, and my husband and I are thrilled to finally be making the trip. Not just thrilled because my cousins are really cool cats, but also because they are total foodies and have planned an itinerary guaranteed to require roomy clothing. We’ll be sampling BBQ, Beer, and Brunch at minimum, and dancing off the calories to live music. Will be posting all about it next week, but for today – my recipe for Pre-Weekend Getaway Soup.
When I’ll be away for the weekend, I’ll rummage around the refrigerator and gather anything likely to not age well, put it in a pot and make soup. Yesterday I had vegetable broth, an onion, one lonely carrot and celery – which, along with a few pieces of frozen chicken breast and lentils, spelled chicken and lentil soup. After adding some salt, pepper and thyme, it became the perfect light fare to prepare us for a weekend of extreme eating.
