It’s time for the recipe of the week, and, just in time for Easter, I’ve got a sweet treat for you to try out: Finnish Oat Biscuits! They’re really easy to make, and are perfect to eat alongside tea or coffee. The recipe comes from the Nordic Recipe Archive – take a minute and check out other recipes from the area on the site, there’s an incredible selection (see the original Finland post here)!
Finnish Oat Biscuits

Ingredients:
¾ cup rolled oats
2/3 cup firmly packed brown sugar
2/3 cup all-purpose flour
½ teaspoon baking powder
Pinch of salt
Scant ½ cup butter, melted
1 large egg
Instructions:
1) In a large bowl, mix the dry ingredients and then add the butter and egg and stir until combined.
2) Preheat oven to 350 degrees Fahrenheit. Roll the dough between your hands to form a log, about six inches long, cover in plastic wrap and refrigerate for at least 30 minutes. Slice into 2 cm (about ¾ inch) slices, and place on a baking sheet.
3) Bake in preheated oven for about 10 minutes, or until golden. Cool completely on a wire rack.
