Dear Belize: for such a little country, you sure have a big palate. After all, you’ve got one of the lowest population densities in the world, but a huge variety of gastronomical influences, including Mexican, African, Spanish, and Caribbean. You’ve also got one of the most gorgeous coastlines in the world, and though your sandy beaches are lovely, it’s the seafood that attracts the foodies…
So, let’s start with the staples – rice and beans! The difference between Belize and other countries in Latin America is that they use red beans instead of black, and throw some shredded, fresh coconut in the mix. Rice and beans are included as a side with most meals, and the meals themselves are flavourful and exciting, yet not so out-there that visitors aren’t sure what to eat. In fact, Belizean food is famous! Sure, many of their famous foods are shared with other countries, but the traditional dishes of Belize are unique in their own way. Have you heard of tamales, relleno chillies, or tacos? I thought so.
Here’s a quick list of popular ingredients in Belizean cuisine: chillies (spicy ones!), plantains, corn, coconut (and coconut milk), seafood, yams, cassava, meat (chicken, pork, fish, calves – even cow hoof!), and fresh fruits and vegetables. Most meals are bound to have at least a couple of these ingredients in them. So what are some true Belizean dishes? We’ll start with breakfast, which usually involves fry jacks. They are made of the same dough as tortillas, but are folded in half and fried until golden and puffy. Other common dishes are, as mentioned above, tacos, tamales, and relleno chillies. Usually meat, seafood, or vegetables are served with rice, beans, and gravy. A little out of the ordinary (for many people), but very common in Belize are dishes that include armadillo meat and paca (a little rodent similar to a guinea pig!).
Now that you’ve got a bit of an idea on Belizean cuisine, let me know what sort of recipe you think we should have next week! I’ll give one a try and feature it on Wednesday’s Recipe of the Week!
