Hey Wanderluster,

I hear you. Some of the tastiest frugal fare we cook falls into the category of "cool weather eating". While we're not vegetarians exactly, we are trying to eat less meat and dairy overall. Especially since we've now discovered that by shopping for halal and kosher products, we can incorporate humane animal treatment without having to necessarily find just the right farmer within driving distance. (although we've looked into that as well) By shopping for things that are organic AND halal / kosher, at least where meat and dairy are concerned, the prices increase significantly. So we are looking for more vegan type meals that our tastebuds enjoy and that leave us fealing satisfied. Last night, it was peanut-lime coleslaw and grilled pineapple steaks. The night before it was cashew-vegetable stirfry.

I've actually been trying to incorporate vegan days into my diet so I'll definitely add this to my recipe list - especially now that the days are getting cooler.
