As much as I would love to be one of those people who can go on vacation and then sit around drinking fruity tropical alcohol-laced drinks, the truth is… I’m a lightweight. As a result, one drink usually makes me tired enough to want to take a nap. And who wants to sleep through their vacation? (OK, some people have no problem with that.)

While at the Honolulu Airport earlier this year, Jon and I popped in to the terribly overpriced bar during our layover to Kauai and noshed on some french fries and I on my Virgin Margarita. It was really like a super sweet fruit shake. But it didn’t put me to sleep and it definitely got me into the tropical mood that I enjoyed for the rest of the week.

Life’s Short, Eat Well!

I miss these so much I could cry.

Jon and I shared a basketful of these Garlic Waffle Fries from The Dock restaurant at the Grand Hyatt Kauai on our last day on the island. I could argue that it was a good thing we didn’t try them until our last day. But the truth is, it was tragic that we didn’t try them until that last day. Because now all I can think about is GARLIC WAFFLE FRIES.

These were served piping hot, smothered in sauteed garlic and sprinkled with Parmesan and parsley.

I tried to replicate them at home using frozen Ore Ida fries – but it just wasn’t the same – boo hoo.
