	<p>New York? Venice? Nope. Bhutan.</p>

	<p>Believe it or not this plate of pasta was served up at a hotel in the central region of Bhutan. It was indeed a special treat given that most meals in the Kingdom are comprised of cooked veggies &#8211; fiddlehead ferns, roasted potatoes, cauliflower, greens and hot chilis.</p>

	<p>Truth be told it could have used a bit of chili peppers, <span class="caps">BUT I</span> wasn&#8217;t complaining. No way.</p>

	<p>I honestly feel healthiest after spending a couple of weeks in Bhutan. I&#8217;m sure that this is due mainly to the fresh food that I consume at <strong>every</strong> meal.</p>

	<p>Above is a pretty typical meal. It includes buckwheat noodles and buckwheat momo&#8217;s (filled with spinach and cheese) as well as cooked greens, potatoes and squash.</p>

	<p>During 2 weeks in Bhutan, I likely eat more veggies than I do in 6 weeks at home! A sad admission from a vegetarian, but true.</p>
