Oscar night is coming up and if you’re hosting your own Oscar party, here are three perfect Oscar party appetizers, sure to impress!
Crostini is both easy and elegant so it’s the perfect Oscar party food:
Pear, Walnut, and Ricotta Crostini
Ingredients
- 1 1/4 cups ricotta cheese
- Pear slices
- Walnut pieces
- Coarse salt and ground pepper
- Honey
Directions:
- Divide the ricotta cheese evenly among crostini. Top each piece with several ripe pear slices and some walnut pieces. Season with salt and pepper and drizzle each with honey. Serve immediately.
Ingredients
- 1 small baguette, sliced
- 1 can cannelloni beans, drained and rinsed
- 2 tbsp olive oil
- 3-4 tbsp fresh lemon juice
- about 1/2 tsp lemon zest
- 2 1/2 tsp fresh chopped rosemary, some reserved for garnish
- a few pinches of red pepper flakes, some reserved for garnish
- 1 shallot, chopped
- 2 garlic cloves, 1/2 reserved for rubbing on toasted bread
- 1/2 bunch kale (approx. 3-4 leaves), stems removed
- splash of white wine
- salt and pepper
- fresh parmesan for shaving over each toast
Directions
- Preheat oven to 350 degrees. Slice baguette thinly into 1/2 inch pieces and drizzle with Olive Oil.
- Place drained cannellini beans into a small gown and stir in olive oil, lemon juice, zest, rosemary, red pepper flakes, and salt and pepper to taste. Set aside to let beans soak up the flavors. (Can be done up to a day in advance).
- Toast the baguette in the oven until golden brown. While slices are still warm, rub with an open side of a halved piece of garlic. Set aside.
- Chop kale into thin short slices. In a medium skillet with heated oil, cook shallots until softened. Add kale and garlic and cook for 1 minute. Add a generous slash of dry white wine, stir and cook until kale is just wilted, about 30 seconds. Remove from heat.
- Mix the cooked kale mixture in with the white beans.
- Divide toasts onto serving plates and top accordingly: white bean and kale, rosemary, red pepper flakes, and shaving of parmesan.
Since both of those are so healthy, have no guilt about indulging in Bacon Wrapped Dates with Goat Cheese
Ingredients
- 20 medjool dates, pitted
- 1 small log fresh chèvre
- 10 strips good bacon, cut in half crosswise
- toothpicks
Directions
- Preheat oven to 375 F. Poke a hole using your finger in the pitted dates to create a hole large enough to stuff the cheese in. Be careful not to over fill them or they’ll melt in the oven!
- Wrap each date with on half-slice of bacon, securing with a toothpick. Place on a rimmed baking sheet and bake for 20-30 minutes, until bacon is crisped.
- Pat excess grease off the dates with a paper towel.
- Plate and serve!
