Summer grillin’ is in full swing around these parts, but it’s not just hot dogs and burger patties: we’re having paninis. My friends CJ and Amanda have recently started their own Pop-Up Panini company called Pandini in the Corona, California area – and last weekend I finally got a chance to sample their sandwiches. Oh. My. Goodness.
Sure, I know what you’re thinking. Anyone can make a panini as long as you have a press. They’re around $30 at Target. But while toasting two slices of bread with cheese in the middle is easy, coming up with truly inventive (and awesome) panini recipes is where the real magic happens. Behold: Mac n’ Cheese with Applewood Smoked Bacon.
Or my favorite, The Cubana, with homemade carnitas, smoked ham, mustard and pickles.
Sadly, I was not able to take a picture of the Guinness French Dip with pulled Guinness roasted beef, swiss cheese, and homemade French bread because SOMEONE (cough**husband**cough) ate it too fast. 😐
The message here folks is that when it comes to Paninis, it pays to be fearless. Go ahead and put peanut-butter, pomegranate jelly and bacon together. Dip your beef sandwich into meat drippings and beer. Take a side dish, cram it between two slices of bread, add some bacon and toast the heck out of it. Because really, what I think every cook needs is to throw caution to the wind and come up with a little crazy-awesome for dinner.
