Diwali – the Hindu festival of lights – is this coming Tuesday, November 13th. People all over India will be lighting diyas (small clay lamps), setting off firecrackers, eating sweets, and gambling (yes, gambling) for good fortune in the coming year.
One popular sweet snack is Gulab Jamun – fried balls of dough in a sweet cardamom syrup. And, they’re relatively easy to make at home.
For the dough balls: Combine 3 cups milk powder, 1 cup self rising flour, 1/4th tsp baking powder, 300ml cream, 1/2 tsp cardamom powder, and 1 Tb ghee (clarified butter) and kneed until you have a smooth dough. Cover and leave out for 30 minutes.
Meanwhile, make the Syrup: 4 cups sugar, 3 cups water, and a half Tb each of ground cardamom and nutmeg.
Shape the dough into about 30 smooth balls. Heat oil in a deep saucepan or fryer, reducing heat when it begins to smoke. Fry the balls on reduced heat, turning constantly until they brown evenly (slow and steady is the key). Transfer the fried balls to the bowl of syrup and serve hot or cold.
