What was the best thing you ate this week?
For me, it was this yellowfin tuna ceviche from Vancouver’s Hawksworth Restaurant.
Like a traditional Latin American ceviche, this dish starts with fresh, raw fish cured in a tangy, citrus marinade.
Hawksworth’s version takes it up a notch by serving the tuna on a bed of toasted amaranth. This crispy grain has a hearty crunch — almost like Grape-Nuts cereal — that provides a delicious foil for the buttery tuna and its sharp lime-infused marinade.
