I honestly feel healthiest after spending a couple of weeks in Bhutan. I’m sure that this is due mainly to the fresh food that I consume at every meal.
Above is a pretty typical meal. It includes buckwheat noodles and buckwheat momo’s (filled with spinach and cheese) as well as cooked greens, potatoes and squash.
During 2 weeks in Bhutan, I likely eat more veggies than I do in 6 weeks at home! A sad admission from a vegetarian, but true.
