Texas-sized Coconut Cream Pie

Everything’s big in Texas. Including the coconut cream pie.

Jon and I were visiting a friend there a couple of weeks ago. We stopped in at The Cotton Gin in Crandall, not too far from Dallas. This is an old cotton gin turned into a restaurant and it serves up all the southern favorites you’d expect to find from a down-home-cookin’ kind of a joint.

The fixins’ were good but the pie was particularly nice
