Nachos

Next week I’m leaving the country and will be gone for 5 weeks. I’ll be leading tours to Vietnam, Cambodia, Thailand and Bhutan. Even though the food is going to be amazing in those countries, it’s just about this time that I start thinking about some of the things I’ll miss when I’m on the road. Including nachos!

These were from The Matador in West Seattle and are piled high with all the usual suspects including beans, cheese, sour cream and the ever important guacamole.

Looking forward to another plate of these when I return in April!
