You might think that I eat out ALL the time. I don’t. I actually cook a fair amount and have been trying to do it more frequently in order to hone my techniques of cooking up some international meals.
This meal was particularly appealing to me because not only did it taste scrumptious but it was beautiful, too. I based the spices on a recipe I found in a vegetarian Thai cookbook I picked up in Bangkok, improvised with veggies and seitan I had in the fridge and placed them on a bed of brown rice.
There’s something about eating with chopsticks that I just love. It forces me to slow down and I end up enjoying the food much more than if I was quickly eating with a fork.
