There is nothing like a frothy ice cold lassi to soothe the heat of a blistering summer day. I like my lassi made the old fashioned way with a wooden handled instrument and a stainless steel jug. No matter how proficient you may become in the comfort of your own kitchen, you will never manage to make your lassi like the professionals. They spend all day perfecting the art of throwing lassi from jug to jug, spinning air into yoghurt until it is as light and as refreshing as an angels sigh.
- 2½ cups plain yogurt
- ½ cup fine sugar
- 2 teaspoons pure rose water
- ¾ cup iced water
- 1 cup ice cubes, cracked
- a few fragrant rose petals for garnish
Blend the yogurt, sugar, rose water and iced water in a blender for 2 minutes. Add the ice and process for another 2 minutes. Pour the lassi into tall, refrigerated glasses and garnish with rose petals. Chill out!
