Pineapple Cookies

I treasure Pineapple Cookies and love cooking with pineapple. This Pineapple Cookie recipe comes from my grandma. She has made this recipe for Pineapple Cookies longer than I can remember and I still love it. A great tropical addition is this pineapple cookie recipe is coconut! We tried this version together when she visited me on the island of Guam. Cracking coconuts on Guam and making Pineapple Cookies with Grandma is a memory I will never forget!

Grandma Fuller’s Pineapple Cookies

1 Cup Sugar
1 Cup Crisco
1 tsp soda
1/2 tsp salt
1 C Brown Sugar
2 Eggs
1 Can Crushed Pineapple (10 oz with the juice.)
4 Cups Flour
1 tsp baking powder
1 tsp vanilla
1/3 C coconut (optional)
Cream sugar and crisco, then add pineapple, soda, salt and baking powder and coconut to flour and vanilla. Mix and drop on cookie sheet. Bake at 350 degrees for 10-12 minutes.
