Wanderfood Wednesday Thai Grilled Chicken

0928091743This is a simple and delicious recipe that I found in a British cookbook while living in Germany. If you love the taste of Thai then this is a nice recipe to enjoy with friends or family when you’re looking for something simple, inexpensive and tasty. Note; I’ve made this recipe many times, but I find it most successful with chicken breast. When I made the recipe with chicken wings I found the taste didn’t absorb into the chicken as well.

2 lb of chicken
4 fresh red chillies, chopped
4 garlic cloves, chopped
A half bunch of cilantro, chopped
2 stalks of lemon grass, chopped or 1 tsp of dried lemon grass soaked in hot water until soft.
3 Tbsp lime juice
2 Tbsp light soy sauce
1 C coconut cream
sweet chilli sauce

Blend chillies, garlic, cilantro, lemongrass, lime juice and soy sauce in a food processor to make a paste. Mix paste with coconut milk and pour over chicken. Marinate for one hour.

Remove chicken from marinade, saving marinade for the grilling process. Cook chicken over a slow charcoal grill or a gas grill, brushing frequently with remaining marinade for 25-30 minutes until chicken is tender. Serve with chilli sauce. Serves 6
